I'm new to this site, there may be a thread already like this. If so, sorry Every Sunday evening we have some friends come over and the smoker gets fired up. Last night was ribs. It's been a few years since I've done ribs and I'm scratching my head on why we don't do more of them.... We had some smaller racks on and those were finished a good two hours before the big racks, so it gave the kids something to eat. The smoker was still going and it would have been a waist to have a empty section on there, so we smoked cheese.
