    I'm new to this site, there may be a thread already like this. If so, sorry



    Every Sunday evening we have some friends come over and the smoker gets fired up. Last night was ribs. It's been a few years since I've done ribs and I'm scratching my head on why we don't do more of them....

    We had some smaller racks on and those were finished a good two hours before the big racks, so it gave the kids something to eat.
    The smoker was still going and it would have been a waist to have a empty section on there, so we smoked cheese.

    At the moment I have a Oklahoma Joe smoker.

    Right across the street from me is a natural gas compressor station. This weekend I called a guy who works there asking if they have any scrap gas pipe laying around.

    I just got a call this morning. It sounds like there is a 4' piece of 24" pipe:D. He said he's just gotta figure out how to snag it from the scrap pile.

    This pipe is usually 3/8" thick, it should do a great job holding temps for long smokes.

    Im going to try a smoked chicken tomorrow. Depends. I have my eye on some larch and doug fir trees that are in the bush that would look better in my yard c,s,s than in someone elses. Ive done turkey before so it should be easy and a great way to finish off the day after cutting in the woods.

    I'm seriously considering taking one or two of these out back tomorrow and throwing them on the smoker.

    Have any of you guys tried "Beef Bacon"

    A buddy picked up a hog that he got from us at the processor and he saw "Beef Bacon" in the cooler. He bought a few pounds of it.

    He suggested wrapping it in some whole pork tenderloins for the smoker tomorrow afternoon.







    I am weary.......

    Well then, yes it's different. You'll find it a very tight knit community... watch out you just might make friends here, real friends.

    We did some thick cut Delmonicos, Porterhouse steaks and some North Carolina sweet corn on the keyhole pit over some applewood splits last evening......

    Our corn on the cob isn't quite ready here yet, so we stopped at a fruit stand on the way home from the beach last Thursday evening to bring some corn home with us.

    It was deeeeeeee-licious!!

    I was out in the bush yesterday harvesting some easy to get larch and Doug fir and also smoked a chicken in the Bradley. Yum! The firewood went From logs to stacks. A friend went south of the border and brought home a six pack and walked through my gate as the last piece of split wood was stacked! That's ok since image.jpg image.jpg image.jpg image.jpg image.jpg image.jpg image.jpg he brought beer. The chicken was smoked with apple and then carrots and potatoes as well. Kale from our yard was turned into kale chips. First time posting from my iPhone so hope it all comes out fine.

    Last nights supper.

    I was skeptical about how a pork tenderloin would turn out on the smoker, I was worried that it would dry out.

    It wasn't dry at all, it was delicious

    Looks like for the next two weeks nothing will go on my pit... We made it half way between St Louis and Springfield MO last night on the way to Texas.


    Hopefully I get a chance to find some good Texas Que.


    I did take a chainsaw along and I'm planning on taking a good amount of misquite home with me:D
