I have a ton of cottonwood that is 3 to 4 years old that has been split and stacked off of the ground for that whole time. That is why I use it.
Mag Craft Ive found smoking bird with the skin on can be of a texture many dislike as its often rubbery, thats why they discard it but Ive found that finishing it off in the oven so that the skin crisps up is a great way to go.
