Does your roasting process involve using groundwater drawn from a confined aquifer under positive pressure? Or perhaps your hardwoods come the former province of Artois in France, where many artesian wells were drilled by Carthusian monks from 1126?
Actually our process comes from my great great great great grandfather who was a coffee roaster in Italy, while doing some genealogy research we found an old business/ log book of his. Which contained a lot of information on his roasting but as well as his hand built roaster. Even specific seasoning of wood however his moisture content was determined by sound and the translated terms of the sound lost all understandable meaning. Lol

Our hardwoods are grown and harvested also in the southern most regions of this area. Thanks for your reply. Too bad about the EPA. Dang gubmint. In my avatar pic, I'm making some lumber from the giant walnut tree in my sister's yard, and a giant saw seemed to be the best way. It does make for an interesting Rorschach though, doesn't it?
