Where do you get your bacon?

Of all the things we had when I was a kid, one of the ones I miss the most is the pork from my 4H pigs. Bacon that you chased across the griddle, hams that would feed a town, and pork chops that ate like rib steaks. I usually did 4 pigs a year and had no trouble selling the meat at the end of the year.

That was the first pigs we've raised, we had two and didn't sell any of the meat. We gave a bit away but kept most of it. Was great having a freezer full of pork! We're almost out now, just have sausage and one ham left.

Hear the joke about the 3 legged pig? Can't remember the whole thing, but the puch line is "a pig that good, you can't eat all at once".

I typically slaughtered at 260-270 lbs, and carcasses dressed 220-240 lbs hanging weight. Loin eye area 11 sq in or better and hams that you could slice a dozen steaks out of and still have two ends big enough for thanksgiving dinner. Just selling my projects at the end of the year, after 11 years of that I had enough for a year of college.

Man that was fun stuff (and a fair amount of work) and I sure do miss it. Really liked the quality over quantity approach!

Somewhere, I have pictures of the pigs.

Love me some mush! Grandma makes it all the time and gives me loaves of it.

Speaking of bacon, I just picked up $113 of it from hyvee for $19. They still owe me 11 pounds.

It was unadvertised about three weeks ago, got a raincheck then. Got it renewed today for another 30 days for the other 11 pounds.

damm. For a few months now I'd get 'economy double applewood smoked thick sliced'' in bulk 5lb boxes at Fareway for $11.99. Its the same as what's in their meat case but not always available.I checked about a week ago & the price increased to $19.99

The ''ends & pieces" are great tasting & just under $2/lb,but are hard to fry being its all random thickness - some crumbs, some big pieces all mixed up.
