    In the 70’s yesterday, and the low 40’s today and the wind went right through you. We were on the the track & football fields today and man does it feel good to be home. And now it just started to rain.

    hmm.... I've never tried a shotgun on a salad hunt.:whistle:

    I need one of those "ceramic" cookers too, it seem's it's not ever going to warm up here enough for my steel smoker:hair:
    We now have 2 p/b's in the freezer (that were fresh) optimistically purchased in the past month. Friggin weatherman.:headbang:

    Man, nothing beats homemade pastrami. Did two so far this year, and after seeing yours, it might be time for another.

    When you "do" Pastrami, is that the pickling and everything from just a plain brisket?
    I've only done a few brisket's, actually it might be only one. It tasted good but my lack of everything:whistle: from selecting to carving the meat, added to the cost that they get for brisket when you have a pork butt budget (cheap bastard).

    This is a store bought corned beef that I soaked in water for 3 days.
    I do some of my own curing,but corned beef is much easier in this case.

    So will soaking a corned beef for a while give me what I know (from the deli counter) as Pastrami?

    Yes,soak it changing the water a few times to pull the salt out of it.
    Your rub is key to the "pastrami "flavor

    Fresh black pepper
    Corriander
    White sugar
    Garlic powder
    Onion powder
    Ground mustard

    White sugar is key for makin a bark,you could add some paprika if you want to darken it up

    Mrs. fuelrod cooked burgers on a wood fire tonight with oven ff and cuke salad. The first weather in a while fit to cook outside.
