My previous employer was a Meat distributor, and sadly closed down in April One silver lining in that cloud, was at the end, they had a lot of inventory to dispose of, and they had a BIG Free for All, literally. I used my electric pallet jack an pallet, and had the back of the Jeep Compass the dealer loaned me absolutely packed This was the first trip out to the car, and a phone call to the Wife One of the things that I got was a 25# case of frozen and vacuum-packed Chum Salmon Filets Chum Salmon may not be Chinook or Coho, but reading about it online, it is Good for smoking, so I smoked a batch of it this morning I wet brined it for about 10 hours, then rinsed and patted it dry, and put it in the fridge overnight to form a pellicle, then put it on the Traeger pellet grill set on Smoke for about 4 hours, and basted several times with a Honey/Maple Syrup glaze Our Traeger Jr smoked a bit hotter than I would have preferred, so next time I will probably only smoke it for about three hours or so. I do like my Salmon Smoked a bit heavier, and Drier than some, so it was still Good to me, just not the Best that it could have been, so I will do some tweaking to get it “Just Right” in the future. It was my first time smoking Salmon on the Traeger, rather than our Little Chief smoker box, and the Salmon was FREE, so I don’t mind doing a little experimenting to dial things in Doug
