    So you cooked, sliced, marinated, back on tbe grill with seasoned slices. I like that.

    The 2nd grilling is just a quick sear on both sides, yes?

    Yea,just get some char from the sugars on it and still maintain tenderness,I dusted them with white lightning and brushed Japanese cooking sauce on em....just to clarify i had joe jr cranked up hot and did the initial cook in big joe.....you could get similar results with 2 zone cooking,i have 2 pits on the same cart so i utilized them....your gonna need a real hot spot to get your sear on.....the whole key to this is nuclear on the hot side,otherwise it will take too long to get your sear on and meat will be over done /dry:chef:
