Been meaning to try some Chicken thighs on the smoker as I saw a few video's on YouTube about it. I know it can be a little tricky with that skin getting like rubber going low and slow. But I think I nailed, we were all raving about LN at dinner! Low and slow in the beginning, lots of good smoke, finish hot and fast next to the firebox to render the skin and crisp it up a bit!
Primo stuff right there.....Nice! Apple is tough to come by around here and I refuse to pay. Most of my cooks are done with Oak, Maple, and Cherry!
Nice! I have some Ash and a bit of Red maple floating around. I need to get it split smoker stick size and drying out.
How is ash for smoking. I have a pretty good amount of it myself but never smoked with it. I tend to use mostly oak since around here it is easy to come by and that is mostly what I burn in the woodstove.
I honestly don't know. I think some has gotten mixed in with some of my smoking splits but I've never done a full blown ash cook. I've read and have heard it is pretty good for smoking. Oak is just great both for the smoker and the stove, primo stuff IMO.
I was wondering the same about the ash and maple. I've only used white oak, hickory, pecan and wild cherry. Don't have much access to fruit wood, although I may can get a bit of pear soon.
I have used some Maple with pork but it was not a 100% maple smoke , there was also oak involved so can't give an honest review on maple alone. I agree with oak , I take any clean bark less splits and put those aside for the smoker. Everything I have ever smoked with has been without bark , not sure how much of a difference it makes but I figure starting with clean wood can't hurt.
I've used Maple a bit and I like it. More mild smoke flavor, but works well. I will mix with Oak sometimes. Same here, fruit woods are hard to come by and I am not paying for it. I'll get cherry from time to time if I am lucky and I truly love Cherry for smoking. I actually have a bunch of nice cherry rounds not split or cut to size. I keep dragging my feet thinking I am going to buy a bigger smoker so I don't want to cut it down to size for this current smoker I have.
Dehydrated eggs out of a survival kit,1 part powder to 1 part water then cook,I followed the instructions for mixing and tried them plain,no salt or pepper....not bad.
I added salt and pepper and it upped it significantly....next time I'm gonna use milk and maybe some minced dried onion
