    We smoked and grilled some steak and venison. They both turned out great but I ate the venison and the family ate the steak.

    The stick burner smoker is in hibernation for the winter but I have 16 lbs of chuck on the Kamado today.

    About 6 lbs will get additional seasoning and go in a 48 hour sous vide bath to become shredded beef for Christmas taco appetizers. The other 10 lbs is going into a pot of chili I started this afternoon. The snow was coming down without mercy while I was trying to get the Kamado lit and up to temp!

    The chili is a no powder recipe from a coworker that starts with toasting and then simmering a mix of peppers. They then go in a blender to make a paste. The rest of the base includes 2 lbs pork sausage, 5 lbs ground beef and 5 pints of beer. I might post more pics after I add the smoker chuck. Or I might sit in from of the fire with a bowl and ignore you guys :D
