My first pics in this thread. Not on the smoker now, but a summary of my efforts this year. First time trying smoking. I think I'm doin it right! Mostly pork, although one of the efforts was a roast. All done with a SW rub, Stubbs BBQ sauce, and with maple wood.
My smoker wasn’t big enough. So I built one! Learned I am a terrible welder but it did hold together. I am having a lot of fun with this one.
That’s funny. The pic you posted had 7 rack of ribs on the smoker. I didn’t know your smoker could also hold a whole hog and half a cow.
This was the first smoke I did on it. 153 lbs of butts, from the room had left on it in guessing I could do around 200-250 lbs of butts on the smoker. I have not actually used the back one yet, that one is set up to be direct heat. I’ll be using that part a lot this summer.
This was my first attempt at ring bologna. But it did not turn out great, I botched the seasoning and it was way too salty. But I’ll make another batch when I have time

I’m definitely liking the pastrami. Man it looks perfect. I always wanted to try it, but I guess I’ll wait until spring.
