Pork Butt, going to have a good supply of pulled pork. I used sumac instead of paprika on the rub for one of them. I’m waiting to see how it turns out. My initial samples says it’s good.
Flanken style beef ribs,getting cooked down with hickory, they will go in a Dutch oven tomorrow to make Texas chile

got my lodge dutch oven in there, i was cooking directly over the coals but it became to intense for my liking even at 225 so i put in the deflector plates....
