id like some more char on these but i dont want to over cook em

 

Man, some good char on those would have been over the top perfect but I get sacrificing char for rare!

 

Tomorrow I'm gonna cook picanha, those will be charred cause I'm used to my happy spot...I have more chuck ribs and I know I can hit em a little harder next time,it was my first go round with boneless chuck....most folks woulda loved em,but I'm kinda a 135 guy
