What's on the grill or smoker?

    Just wondering, cause they are noticeably different down here. I am a fan of both, especially good Tikka masala.

    It depends on if you're talking about Chicken Tikka or Chicken Tikka Masala. Chicken Tikka is marinated, and grilled on a skewer or in a tandoori oven. Chicken Tikka Masala takes that grilled chicken and then finishes it in a tomatoey-creamy-spicy sauce. Chicken Tikka Masala and Butter chicken are pretty close (I shoudln't have said "aka")...different spices are used. I haven't seen Chicken Tikka Masala at restaurants in Canada too often...it's a very popular dish in Britain, actually. But I do see Chicken Tikka (the grilled and skewered) a lot.

    Anyways...dishes change across borders, and names get swapped in and out.

    I like both, but especially like Tikka masala. Is chicken tikka and tandoori chicken the same..usually see the tandoori named one here. We found a new-ish Indian restaurant that has probably the best Tikka masala I've ever had. And their paneer makhani and butter chicken are awesome too.

    I had never had Indian food till I went to Australia for a year of college, had never seen it or heard of it...

    Cool. I haven’t used nitrites for jerky. Doesn’t last long enough in our house.

    Well to tell you the truth it's not so much about longevity its about pathogens on the meat and putting the meat in a smoker or dehydrator for a period of time that will expose it to the danger zone so the little critters can grow.
