I dont have a smoker yet so this is what I settle for. Last night was chicken breasts and venison sausage with apple wood.
What are those? I cant quite make it out. I see peppers wrapped in bacon but cant make out the rest of it. Either way it looks good!

funny someone on here the other day was talking about PRIME chuck roast,i have never seen it around here in my life,dont ya know buddy of mine shows up with 2 for me,came from local supermarket,he bought a bunch of them and ground them into burger.$3.99lb.....mine are gonna be pulled beef
Late start, but I decided a couple yard birds on the UDS might be good. We plan to shred most of it, vac pack it and save it for nachos, tacos and quesadillas. I ran out of time to make a rub, and was at Costco anyway, so I bought a thing of Weber Kickin' Chicken to blast on there. Never tried it. Should be ready in a couple hours. Spatchcocked and sitting at 300 degrees right now on Apple wood smoke. Willow is guarding against a squirrel attack!
Finished up. I like the Weber seasoning. Has a little heat but not bad. We shredded most of the chicken and then froze it. Chicken on a drum is crazy easy and pretty fast.
Nice thread going here. Just some sirloin tips marinated in some sauces. These were cooked over charcoal and oak. We had mashed potatoes, fresh green beans and sliced cucumbers to go with it.
Tonight was grilled chicken thighs over oak splits with Jack Daniels bbq sauce. The weather this week has been below 90 degrees so far, so I can get out and enjoy cooking over the fire.
I'll be trying the pulled beef recipe "elderthewelder" posted in the beef on a smoker thread. I've never done pulled beef so I'm giving it a run. 6# of prime chuck roast from Costco ready to hit heat in the morning. Pics to follow...
