    Nop not over cooked! My smoker has a hot spot on the right side so I usually turn whatever I am smoking around to even it out. I don’t really need to given it’s not really that bad of a hot spot but I like to.

    Skeet, how is that thermpro working for you?

    My old remote thermometer is getting flakey and the thermpro looks to be reasonably priced

    Heat the smoker to 225 and stick them in. The time varies a little depending on the size of the tomatoes. I did the last batch for about 40 minutes. You can also cut them in half and take the seeds out. They smoke faster that way. We put them on the top rack and set a pan under them to catch the juices. They do get runny.

    Decided to try my hand at Smoked Thia chili hot sauce today. Not really smoking the chilies I’m just gonna brown them up a bit this time. I just threw them in the smoker.
