Well it turned out just ok... too dry on bark. I think the temp got too high about 2.5 hrs in. Had a problem getting it cooled back down . Oh well, just have to try again.
Not that just sux...you have to try again and eat some more ribs Give this method a try-I use it a lot for ribs and they come out great! When wrapping in foil, wrap them tight, not loose or tented. Marinated pork loin over charcoal. Thinly sliced with barbecue sauce and cheese on a fresh ciabatta roll. Grilled in a skillet with butter and weight on it until the cheese melts.
Seasoned pork chops, nothing special just relaxing with a few cold ones with some chips and salsa. We enjoyed a nice swim after driving to Roswell, NM early this morning.
