2.59 lb pork steak...seasoned with lemon pepper rub and put back in the fridge for an over night dry brine.....gonna cook on the bronco tomorrow over coals without the heat deflector....I'll prolly make a baste/mop too cause I'm not gonna wrap,cause I'm not a Sally
Is this what we Southerners call a "Boston Butt"? Really a pork shoulder. After looking again not enough weight for that,just never heard of a pork steak.
...its a steak thick cut some times with a bone in it cut from the shoulder....i cook alot of them...so yeah,its just a thick steak cut off it
