So, I found a Tri-Tip at Costco, which I’ve never seen any there before, and decided to make it on the grill. Too tired to do it any other way.
Thanks, Skeeter. It was actually quite tasty. I used Adobo seasoning as a rub and that’s probably what made it crispy on the outside. Med rare in the center made it really nice.
Tri tip looks great NortheastAl nice char. Foolin around with some charcoal this afternoon. I haven't cooked with charcoal in probably 20yrs but I found this weber performer hiding amidst my dads junk cars, equipment, scrap etc. He couldn't remember where he grabbed it but said have at it. So I gave her a good cleaning and figured I'd start my trial run with something safe. Hot dogs and taters
Bottom round sous vide for 12hrs @130⁰ . I seared and vac sealed it last night then dropped it in the sous vide this morning. Gave it another quick sear in hot cast iron again after i pulled it from the bag.

Yessir it was a pretty good day. We love Hasselbeck potatoes. They're so easy and have tons of flavor!
It's been quiet in here, where's everyone at? Played around with the weber again last night for dinner. Big ol porterhouse and some apple/ maple sausages from the butcher (plus some dogs for the kids).
Got some pork belly burnt ends hitting the smoke for a friend's bbq later. Hope everyone has a good weekend.
Oh yea! Got some cheese brats braising in beer with onions and taters. And of course some sauerkraut on the side.
