What's on the grill or smoker?

    Hmmmm- I have been trying dry (uncovered) ribs lately and they have been ending up quite tough. Obviously not smoked long enough but I end up surprised every time. :picard::headbang: What makes it worse is that I know I should do 'the bend test' or a pull test between bones but I always seem to go by the clock. The last set I ended up using the house oven (OH, the shame!) to get them to at least edible. 'When you are all alone, and someone is standing in your light......' I am my own worst enemy sometimes. That said, those on your smoker look excellent and are probably also edible. :rofl: :lol:

    Went to the store tonight and it was slim pickins' in the meat dept. They did have a couple of OK looking briskets but they were just under $6/ lb. Bought a couple small chickens that I will smoke tomorrow, and will stop by another store that usually has really nice bottom round roasts at very reasonable prices (this info. a few weeks old so it may not be so any longer) that we love smoked, and I do them exactly the same way as brisket.

    Is that grill something you bought or made? Specifically the rolling chassis part.

    for your ribs to keep them from getting dry i spray them down with apple cider or beer or hell even both every 25 mins basically or jus whenever i feel like it after the ribs get a little cripsy looking on the bottom i pick rhem up off the grill fully wrap them in foil and place them back..usually its around 3
    -4 hours depending on if its a half rack or full rack…..spare ribs or center cuts take longer …baby backs much quicker…

    Dual power! I like that alot man very smart havin two forms of grills in one spot… got ur low n slow while being capable to shoot burgers n wings out on ur side kettle grill

    also sounds like u mite be using too low of a temp i learned to ignore my temperature gauges and jus pay attention visually to whats goin on check ur stack make ur sure smoke isnt too grey keep ur fire hot and distance the ribs accordingly..u will get it eventually dont give up

    I've been slacking not smoking lately. Between getting dark at what seems like jus after lunch, a bunch of chitty weather.....
    Last night I got home after plowing - about 7:39, I had 3 things in the fridge that "jumped right out" to me. We had some leftover mashed taters, a half of a baked tater and a bag of pulled pork.
    Got the taters hot with a diced onion, then the pork, then got it all mixed together making sure to put a heavy browning on the taters.
    Mmmm, a little tx Pete's, s&p.
    It doesn't take much to make my day. :D

    They look a bit pale but they were very crispy outside and juicy on the inside- excellent. The seasoning mentioned on this site a while back, 1 part each salt, pepper, seasoned salt, garlic powder, onion powder. Smoked at 300F using a mix of apple and cherry pellets.
