    A slice of Jalapeño peach sausage wrapped in bacon. Then filled with cream cheese mixed with chopped candied jalapeños.

    Hmmm. The same stuff that people can’t stand the smell when they cut it. I imagine it’s the tannins. How is it for smoking/cooking?

    it great...using it for a coal base...doesnt make a heavy smoke,so when i want big smoke i use hickory...very mild flavor...ive even tried soaking some...it just aint got the smoke...but makes great coals....run watcha got!!

    20210812_163056.jpg the wild fork spicy was just that...the venison one was Ok and same with the feral hog one....just ok...wild fork wins. .it was coarse grind good casing and flavor.

    It wasn't bad by any means....just not my go-to...I cooked them to 170°+ and they were moist and tender..I wouldn't hesitate to cook then again...just not the norm here
