Hmmm. The same stuff that people can’t stand the smell when they cut it. I imagine it’s the tannins. How is it for smoking/cooking?
it great...using it for a coal base...doesnt make a heavy smoke,so when i want big smoke i use hickory...very mild flavor...ive even tried soaking some...it just aint got the smoke...but makes great coals....run watcha got!!
the wild fork spicy was just that...the venison one was Ok and same with the feral hog one....just ok...wild fork wins. .it was coarse grind good casing and flavor.
Some fettuccine noodles? I wish I had the meat shopping options you have. Boar sausage is good? I'd certainly try it.
It wasn't bad by any means....just not my go-to...I cooked them to 170°+ and they were moist and tender..I wouldn't hesitate to cook then again...just not the norm here
