Trying something different... got some potatoes and onions with butter... my hamburger with garlic & jalapeños (really enjoyed those the other weekend), one patty for the other half without jalapeños...  and two lobsters tails... never did them... but I’m doing surf & turf tomorrow night for my birthday on Monday... so I’ll see how it works out.... worse case I can change it up Tomorrow night...

Quite impressed with the lobster tail... About an 1 hour at 225 F .... 138F on the temperature probe... Made some melted better with a squeeze of lemon... The hardest part was splitting the shell with out splittering it all up...

One of those heavy duty scissors for cutting food items works great.

You can turn the lobster over and cut the soft side. This works pretty good also.

Hey lukem , I used this recipe. Had the Tender Quick and bellies but could not locate a fast source of Pink Cure. Turned out great! Homemade Smoked Bacon . I slice it after smoking and vacuum seal. As soon as the word gets out you are making bacon, you will get a lot of friends and family members who will call out of the blue and say "Hi, nice weather, have you made any bacon lately?

Probably would have been terrible without the cheese. Good call.
