What's on the grill or smoker?

Skeet, why not get some new springs and ditch the chock block thats in so many pics?

 

New springs don't work,it was a design flaw on the big joe.the newer generation is different and works fine.

Cabot sharp chedder that I smoked with apple back in March 2017

 

I stuffed it in these chorizo/beef balls wrapped wit bacon

 

Smoked with apple last nite

 

Tonite some of these are stuffed with mozzarella and I'm cookin with mesquite

 

Finally found some racks that fit half hotel pans

 

35°this am when I lit the pit

 

Where did you find those? Perfect fit.

 

This has soaked for a couple days,got my rub on and smoke rollin...strami for supper

 

We got down to 43°. Going to get a freeze within the next two days. Finally feels like fall.

 

Did you use an eye of round, Skeeter?

 

Amazon,got 2 chrome,and 1 stainless 8X10

 

Yeah eye of round.....actually soaked for 3 days....mesquite smoke now gonna throw some apple in there in a bit...

 

I’m curious to see how it comes out. It has to be nice and lean.
