it was in a little over 10 hrs with hickory and some mccormicks burger mix-in for rub ran at 225° most of the day then ran it up near 300 for the bird skin at the end.....it was 12lb before i trimmed it...i usually weigh the fat after but didnt this time,prolly around 10lb when it went in the smoker
