Yeah. Baklava. And the anticipation hurts. It's dry when it comes out of the oven, and then the sugar/honey syrup gets spooned over the top. It really needs a good 24 hours to get all soaked in. It's edible now, but it will be much better tomorrow.
Bacon wrapped chicken thighs stuffed with jalapeño cream cheese. The fixins. Pound your thighs flat. My store has boneless, skinless and to me it's worth the price. I hate de boning thighs. Sprinkle what will be the inside of your roll with your favorite BBQ rub. After all that pounding you should be parched, pour yourself a beverage. Dice up jalapeños and mix with cream cheese. I had 16 thighs and used 12 jalapeños and 2/1/2 bars of cream cheese. Adjust to your tastes. Plop some filling in your thigh and roll up. Then wrap bacon around thigh. I stretch out the bacon a little for some of the bigger ones so that I can get it wrapped a few times. Try to cover the ends as best you can so you don't loose too much cheese, your gonna lose some no matter what. All done and ready to hit the smoker. Sprinkle a little more rub over the top.
Into the masterbuilt at 275 for about 2 hours. I'll check them at about 1/1/2 hours with my Thermo pen, looking for 165 degrees. Some white oak bourbon barrel chunks and hickory pellets in the smoke tray. At this point you should be empty so pour yourself another beverage and settle down in front of the fire, just don't fall asleep! Might have to set a alarm. And we're done! Slather a little of your favorite BBQ sauce on during the last 10-15 minutes of cooking. Easy to make and guaranteed to be a hit. Taken these to a few parties and they disappeared almost instantly! If the bacon is still a little soft for your taste you can put them under the oven broiler for a bit to crisp them up, do that before BBQ sauce or else all the sugar in the sauce will burn and taste bad.
