    Smoking pork for New Years day meal. Pork loin wrapped in bacon. One will go in kraut and the other in foil with some apple juice.

    I am also cold smoking some marshmallows for the kids.

    Just kidding. I found these mozzarella balls at Costco. The kids demolish my smoked cheese so I thought I would make them a batch of their own.

    I'm not sure if I've made these for you guys before but even if I have they are good anyway.

    ABT's but with sweet peppers. Jalapeño's were not available except in a boutique pack at $1.50 per pepper so I used a bag of mini sweet peppers for $4.99. 2 lb of bacon and 2 pkg of Hillshire mini smokies, cream cheese, jack cheese, chili powder and shallots.

    Made a big tray. Had to load both decks on the Weber smoker. Lower shown.

    Have a pot of Sarma (aka pigs in a blanket) on the jet burner now. Have to cook it outside as the wife does not like the smell. Its whole heads of cabbage that have been fermented (sour heads) stuffed with pork, beef and rice. A bit of bacon and sausage in with the rolls as well :)

    The mozzarella cheese balls have been smoked and rested in the fridge for several days. I vacuumed sealed them and put them in the freezer. They tasted good when I bagged them. Right off the smoker they are very bitter. In a month or two they will be great.

    What causes the bitter taste that they taste better later on? I would like to smoke cheese as I have never done it.

    The cheese has a very bitter taste from the smoke. The longer it sits the smoother the flavor. Not sure the how's and whys of it but it works. My family really enjoys the smoked cheese, have fun with it.

    Almost forgot about this...... I have been cooking even with the cold temps but lately have been short on time for taking pictures and posting.

    Same here, although negative temps and high winds have kept me inside this weekend being one of the few times I will use the electric oven instead-helps heat the kitchen too :)
