Was at a party a while back and had some candied bacon. It was thick sliced peppered bacon that laid out on a baking sheet and covered with brown sugar. The sugar and grease made a coating that was unbelievable. I felt some arteries shrink that night.
Just pulled the pork tenderloin off an it is resting. I was going to smoke ribs but my wife wanted something a bit healthier so I made the paprika rubbed tenderloin.
Carrot pie. Saw this on the local news. Dilly Carrot Pie with Nut Crust Nut Crust ½ cup finely minced nuts, any type ½ tsp. salt 1 ¼ cups flour 4 Tbsp. cold butter, cut into small pieces 3 – 5 Tbsp. cold water, approximately Filling 1 Tbsp. butter or olive oil 1 cup onions, finely-minced 2 cloves garlic, minced 1 lb. carrots, very thinly-sliced 1 ½ cups cottage cheese 1 egg, beaten ¼ tsp. black pepper 1 Tbsp. dill weed paprika Directions: 1. Prepare nut crust by combining nuts, salt, flour and butter together in a bowl. Use a pastry cutter or forks to work the mixture until it resembles coarse cornmeal. 2. Gradually sprinkle the cold water in and mix. 3. Roll out the dough and form your crust in a 9” pie pan. 4. Preheat oven to 375°F. 5. Prepare the filling by melting the butter in a large skillet. Add the onion and garlic. Cook over medium heat, stirring frequently, until the onions are soft (5 – 8 minutes). 6. Add the carrots and cook and stir until the carrots are tender but not mushy. 7. In a bowl, beat the cottage cheese, egg, black pepper and dill weed. Add the cooked carrot mixture and mix well. Spread into the unbaked nut crust. 8. Sprinkle the pie with paprika. Bake for 15 minutes at 375°F, then turn the oven down to 350°F and bake for another 30 minutes. Makes 8 serving I modified it a bit. Ricotta instead of cottage. Triple the garlic. Add 8oz of cooked Italian sausage and use marjoram instead of dill. And the crust is a gluten free crust so my wife can have it. I'd add a little cayenne ifin I was the only one eating it, but since my wife grew these nice fingerling carrots which work perfect, I restrained myself
Pad Thai with chicken satay. The Pad Thai was from a box, the satay was from a recipe. This was fantastic. Coconut milk and peanut butter. Mmmmm. I had no shrimp for the Pad Thai.
Made some ground turkey stuffed peppers. Black beans,corn,turkey,tomatoes some rice and seasoning. Was really good and froze a batch of the mix for later! So yummy and leftovers are always nice.
