What are your stove top temps?

    Your temps will definitely read cooler there. You will want it right where the pot is setting to get the higher temps I'm reporting on mine. In your case an IR gun would be best if you want to keep the pot on there. And keep a relivance of stove top temp to your face temp and you should get a good temp correlation going.
