Decent haul! The 4 chunks are muscles that felt firm enough to slice. We'll see. Most of it will end up getting vacuum sealed and into the freezer. I'll be taking some on a winter camping trip next weekend. Overall, I think a chunk or two of hickory needs to be part of the equation. The bark is tasty, but not hickory-ish. Very pleased with the results. I haven't fired up the smoker since pre-covid. The WSM remembered how to perform!
One final picture. The pieces sliced up just fine. To re-heat, I'll put just a little water in a pan, and let the pork steam for a few minutes, then a drizzle of BBQ sauce.
