Very nice haul you have put up Greenstick . That is a lot of work, but worth it. I wish I put up some sliced spiced apples for pies. I did a few quarts of chicken stock last weekend. This weekend will be turkey stock, and that should do it. I'd like to fill the last few empty jars.
My kraut is almost ready to go, I usually freeze it but I'd like to can some this year. Any preferred methods, guys and gals? Just a hotbath, or pressure?
Chrissy does pressure and it comes out very nice! My intestines like it also! But it always the Dog....
Canned some Peach Habanero Sauce last night. Thank you ChipsFlyin !! Had it on a pork roast last night and on tortilla chips today!
Peach Habanero Hot Sauce 1/4 cup habaneros - 4 unseeded 1 tbs olive oil 1 cup water 1 cup cider vinegar 1 cup white vinegar whole head of garlic 1 onion 4 tbs raw sugar or brown 2 tsp Worcestershire sauce 1/4 cup lime juice 1 - 2 tsp salt to taste 1 cup carrots 1 large can of peaches - 28 oz or 2 smaller cans - drained ( may add some syrup back if not thin to your liking) - cook carrots in the water until soft - saute garlic in olive oil Mix everything together - bring to light boil and off- do not keep boiling. puree in blender back in pot - fill your jars while still hot - seal and hot water bath . I'm sure it could be frozen in containers. Tweak to your liking. Enjoy! Enjoy!
I'm on it. Probably not until my peach tree makes some peaches next year though. I have some smoked habs in the freezer I'l put in it.
I forgot about the canning thread until TurboDiesel brought me back around so had to defiantly have another look see. When I got to your hot pepper sauce my jaw hit the desk! The peppers in the smoker pic belongs in one of those foodie gourmet magazine! That sauce has to taste incredible! I may have to empty out the local supermarket of peppers, fire up the smoker with some apple wood and do a batch.
Ha, other members have a lot more jars and pans than I do. I just took a wasted space and built it up to suit our needs.
