    Fruit of yesterdays boil. 2 cups of filtered syrup and another cup in a homemade maple pecan pie.

    The egg white filtering for late season syrup is amazing ,all the crud and Nitre is removed with the egg whites leaving clear syrup.

    Glad to hear it’s working out for you Walt! That’s an old timers trick from back before adequate filters. Might have to give it a try on this syrup I botched the other evening.

    Time to take the sap sack holders and taps home. Give them a scrub and boil the taps..put everything away till next year !

    I pulled taps last week. Probably would have gotten another run maybe 2 depending on the weather but I have too much other stuff to do.

    I filtered and canned today and I’m happy to report that the vacuum filter worked really well! I ended up with 4.25 gallons of maple syrup and just shy of a gallon of Black Walnut syrup.

    Yes darker syrup is great for cooking BUT in my world SOS. Stand for sugar on Snow :drool:

    It’s gonna get cold again. We’re hoping for a late season run. I’m at 1500’ elevation. Fingers crossed!

    I’m certain it’s running here in mid Michigan. It typically does run through the end of March, but the false spring gutted the center of the season. Regardless the buds haven’t popped and that means viable sap yet.

    Yes the early warm weather definitely hurt us here. Some of what I’m getting is still crystal clear. Other trees are cloudy and tinted yellow. What’s the worst that can happen? Dumping it doesn’t bother me know.

    20220326_191245.jpg Took a long time to boil down about 19 gallons on a backyard turkey fryer burner but I ended up with another 6 - 8oz and 3 - 5oz bottles of finished syrup. These are all to give away to friends and family.
