Last time I did a big butt, I started too late in the morning and was up until 2 or 3 am to pull it when it was FINALLY done!!
I usually smoke 2 pork button at a time, overnight. The butts go on 9pm. I watch it for an hour or so. Then, off to bed I go. 12-15 hrs later, goodness. Never had an issue with any visiting critters. I love the smell of BBQ in the morning.
Did a 10 pounder today. Started at 9 am ready to eat at 6 after an hour of resting. Wrapped it at 165 to get through the stall.
I find myself unable to sleep when I have meat in the smoker overnight. I tried, but just unable to ignore it. So for pork butt I start early in the morning and eat later. It’s better the next day anyway.
Beautiful, my mouth is watering...…I usually smoke smaller butts (4-6lbs) and my smokes last about 5-7hrs depending on size.
Last 8-10 pound butt I cooked I put on about 8 pm, had an employee call in sick overnight so I had to go in, forgot about my grill but when I came home at 6 pm the butt was fall off the bone perfect with a nice bark and great moisture!
I did a 16 pounder about 2 months ago. I smoked it with charcoal and pecan wood. Kept temp around 250-275 for about 6 hours. Took it off the smoker at around 10:00pm and put it in the crock pot with water and apple juice and a little more of my home made dry rub. Cooked it on low all night in the crockpot. Was probably the best butt Ive ever made...
