    Not in my neck o the woods.
    Yes you can use meat from the head, but not the brain, glands or eyes.
    Now the tongue is best pickled along with the heart and served with spicy mustard.:drool:
    All the bones go in the kettle along with kidneys and some liver.:stirpot:
    If'in you get buy, stop in for breakfast, I'll fry some up for ya.:flipeggs:

    We cut the heads down the middle to scoop out the brains and toss them. We also use the band saw to cut out the eyes and the snout. I’ve had pickled tongue but prefer to throw it in the scrapple so we get more. Ours is all meat.

    I've had good and bad scrapple.

    A lot depends on sourcing, and cook.

    Just curious, do you put syrup on yours jrider? My folks often did.

    When I was growing up, I always liked it with good apple butter.
