A friends brother-in-law got it and none of them like it, they had it professionaly cut and packaged and burger made and giving it all away....Well my gain cause that is one of the best bears I have ever eaten....Yummmy!I got 3 packs of chops and 1 pack of round and 5 packs of burg.
Never cared for bear meat myself, but good score. Now elk... ahem... I have a smoker grill just waiting for elk.
Some of the best ring bologna I ever had was bear meat, and I've had some really good bear steak. But, I've also had some nasty stuff too. That said, if the bear is out of the woods and has had a diet mainly of berries and nuts, he's usually good eatin'. If he's nosin' in the trash every other night, not so good eatin'!

Scotty hit it right on the head, they are what they eat. As well, to get good bear meat you need to absolutely as much fat off the meat as possible. The rancid, or bear taste comes from the fat, not the meat.
My Dad was a ticket seller for the C&NW railroad for many years… he retired in '66. Back in those days he had many well heeled customers who travelled by rail… some in their private cars. We always got really nice Christmas presents from the families of the giants of brewing and manufacturing. One December a truck pulled up to our house… they had a large wooden crate to deliver. The driver and his helper unloaded the box and schlepped it into the house… we were clueless to the contents. My Dad got home and opened the crate… inside were dozens of large cans of wild game meat… bear, venison, moose, elk, rabbit and more. Over 200 lbs. IIRC. My Mom was used to preparing game as my brother and I did some hunting. She made some great roasts and stews over the next several months with that meat…
