Soooo I want real ramen noodles and I've never made them before. I know how to make the noodles that's the easy part. What should I do for flavor I'm thinking along these lines...

    1) spinach
    2) beef stock
    3) black bean stock
    4) soy sauce
    5) cabbage

Then cook the ingredients and add the noodles at the end.

What do y'all think am I missing something? Or does it sound right?

Hot sauce and egg with chopped garlic and green onions in miso sauce is also good.

traditional ramen is either miso based or soy based, I prefer the soy. I add corn, cabbage, sliced bbq pork to it. We have a couple decent places close where you can order ramen,However I have not had real good ramen since I left japan in 91

We buy these noodles by the case and than add whatever we want to them / they are not too bad for instant noodles

    Miso and green onions.

Other options i have tried: chives, mushrooms, ginger, dashi, tofu, cabbage, seaweed, etc.

I like ginger, mushrooms, maybe some bamboo shoots, green onions, just about any meat, peppers (hot) and sriracha.

    Water chestnuts, water chestnuts.

My fave, love them things and they add a lot of "fill you up" type of stuff. I also love this http://www.huyfong.com/no_frames/garlic.htm
I use it in anything I want to add a zing to. It's not as spicy as traditional Sriracha, it just tastes fantastic and adds a -little- bite depending on how much you use.

I left out red miso. I prefer the darker variety.

THANKS ET333. We went by Top Asian Market in Worthington, MN today. Great place, we try to make it about twice a year to restock and try new things. Found cans of quail eggs, about two dozen in a can. Sure makes up look fancy, through.
