Nobody shoots doves up here. I'm not even sure it's legal.

Do you do the step on the wings and pull the legs trick when you clean the grouse or do you cook the whole bird?

Mourning dove around here holds deep family tradition. Small, but delicious. We also hunt pheasant, ruffed grouse, and wood cock.

Some of my buddies do the stand on the wing thing but I prefer to breast them and take the thigh also. I toss the lower leg and feet in a old grocery bag and give the kitties treats when I get home as the lower leg is full of the small toothpick bones. I also use a hillbilly x-ray machine to find bone pieces and shot in the meat.

What is a hillbilly x-ray machine? A flashlight?

Take an electrical box for wiring in light fixtures and attach it to a 1 foot square piece of plywood. Use a cord off of an old appliance and run it into the box and wire a porcelain light socket into it. Put in a 300 watt light bulb and plug it in. Run your meat over the light and any bone chunk or shot pellet will cast a shadow. Works awesome on pheasant.
