I have read of these being around back in 2012 so not new but reports seem mixed on them

NO WAY I'd commit to a ton or two of those Lee Energy's unless I tried some first. They were pretty "not-so-great" a few years back. I'm being polite :D

*** actually, looking at their spec sheet they're barely a "premium" pellet

I agree, but to be honest, I wouldn't commit to ANY pellet, tonnage-wise, without trying them first by the bag or 3!

What do you guys say about having a really good stove that can burn almost any pellet?
Would a cheaper less quality pellet be more economical to burn??

As long as you don't have to burn more of the lesser quality pellets and as long as you don't mind more frequent cleanings. I have always taken that approach but I can get away with it because my house is only 1300 sq. ft and well insulated and 1 floor so over the period of a heating season the difference between a pellet putting out say 8500 btu vs a pellet putting out 8200 btu really didn't matter much because the stoves very rarely ran above heat setting 1 no matter what pellet I was burning.

I generally subscribe to the thinking that you get what you pay for..
    YMMV.
