shrimp enchiladas on the way. Strange veggie combo because it’s all out of our garden except the broccoli. Cheese sauce and rice going too.
No offense, but that pic is too big and too blurry. Although I have to admit that now I'm thinking of enchilada's. Shrimp scampi over angel hair pasta is on our agenda tonight. If I could just get a garlic/butter sauce to my happiness level I'd be a VERY happy man. Chaz

Just joking Chaz I get a lot of good recipes online Allrecipe is a good place to visit Genius kitchen Even Betty Crocker I usually find a half dozen recipes and then make up my own from a mix of all. There are a few to stay away from though. Like Alton Brown. He likes to add his own spin on traditional recipes.
Wait for it.... You’re right about that Alton fella.... But- I do my version of Shrimp Scampi and it brings rave reviews.... Pats o’ real butter and minced garlic are the cornerstones of a proper Scampi, true.... but a splash of white wine, a smidge of breadcrumbs and a finely shredded fresh mozzarella sprinkled sparingly will smack you upside the mouth.... Trust that!
