Has anyone made smokies or venison snack sticks ?I was looking to make like a honey BBQ snack stick then smoke them over apple wood ,If anyone has a recipe let me know . JIM
Haven't yet but that's on my to do list. Got a stuffer last year and am slowly using it for more things.
Called a local meat market that makes great snack sticks/ smokies and asked to buy the seasoning kit, guy said sure but its just honey and crushed garlic than to the smoker. might try that if its that easy.

I really want to make them too, but need to build or buy a designated smoker so I can control temps better. Hmmm
Probably right, looking at Sausagemaker.com for smokie spices and casings. The instructions say to smoke at 120-130 for a few hours then up it to 165. That's all way below the temp ranges my grill can run at so if I want to continue to smoke stuff I need to either add a cold smoke to my traiger or buy another smoker.
I'm thinking about building one next month......gives me something to do while cooking maple syrup.....
I found a great base for a smoker at a house I have listed for sale. A freezer that would have been used for a deli or something. Bout the size of a big chest freezer with 3 doors that open on the front. Now I'm debating of I should just use that and build one from there. Scotty what are you planning on using for heat, temp control, ect
well we built one at work using three electric stove burners, a homemade switch box (to shutoff/turn on each burner individually), and a thermal switch out of a stove. May use an old barrel For the "smoke box", still undecided. I may even scratch that whole idea and go total old skool and make a wood fired smoker with a wooden smokebox.....
I was thinking along the lines of the electronic burner as well. A friend has a dual burner that he said I could have. I would like to set it up on a thermal switch if I can but not sure how to set that up. Will have to do some diggin on that.
Will be going all wood here. Oh boy, all wood with a grill deep enough to put the starter chimney right inside.
