Was that 100 minutes to cook in the pressure cooker? Seems like a long time. Also, do you put any liquid in there or just the fish and the salt? Thanks.

Salmon is quite rich especially Sockeye or Spring so the only thing you add to the jars is a touch of salt - no water. Some recipes call for oil but Sockeye is so oily to start with you don't need it. You pressure cook that long and at that pressure because there is no acid like there is in fruit. Canning in jars is easier and cheaper to invest in. You can also can in tincans but you need a special sealer to get the lids on properly. Here is a link that might help with canning fish.

Canned fish is an instant sandwich filler when mixed with onions and mayonnaise or added to omelets for a main dish. Mixed with mashed potatoes for fish cakes. Lots of ideas.

If we get a big carp spawn this year we might have to can up a bunch of it!

My only advice when using a pressure cooker is "NEVER leave it unattended!!!"

No, the dog isn't wearing a matching sweater. For the first time in a long time, I had enough room in my jacket to be able to wrap the dog up. As Campinspecter has mentioned in other posts that I have lost 60 lbs. this past year(2013).
