This seems to be an ongoing theme here in the smokehouse so I thought I would help it along. I cooked a 2.5lb leg of lamb today and used a recipe that I got from Well Seasoned. I used a red wine instead of white and soy sauce instead of beef stock since I didnt have any. I cooked mushrooms in the sauce and fried up some polenta too. Anyway it turned out great and weve got enough leftovers for lunches tomorrow.

Part of it was out of necessity due to a lack of beef stock and part of it was personal preference we like red wine over white and I wasnt going to buy a bottle of white just for one meal. Thank you for sharing that with me it turned out great. I was a little nervous about using soy sauce but it worked perfectly.
