x2 on the Chicken Paprikash. My great-grandmother was Hungarian, came over on the boat. That was a family favorite for us. I got on a lean(er) meat kick over the summer - mostly chicken and venison. I just tossed it in, in place of the meat in other recipes. My chipotle chicken chili was a hit.

Marinade in Italian dressing and soy sauce and grill. Chicken pizza with veggies. Stuffed chicken breast. Italian chicken patties. Fried chicken cubes on salad. Cut into strips...bread in crumbs...bake. Chicken picatta.
This is what I did the other night, it was really good. I got inspired by a meal I had at Cracker Barrel last week: A chicken breast, browned in a pan with a little olive oil (or butter) Two tablespoons any bottled barbeque sauce, I used Stubbs Dash or two of powdered cinnamon Diced apple Touch of lemon, pinch of sugar Mixed the sauce with the other ingredients, pour onto chicken while it is still in pan, let simmer till hot. Just double ingredients for two breasts, etc. It was pretty good, I thought.
Take a fork and go psycho on the chikn (.Y.) breasts. Once stabbed full o holes put in a ziplok. Mix 50/50 hunney and lemon juice-green bottle kind and pour into bag. Let soak and flip every 1/2 hr. Couple hr later butter a cookie sheet. Crush tortilla chips and toss in any spices u like. Put small bed of chip crumble down place H/L chick on bed. Really pack chip crumble on tops. Bake til dun. Over the lips and thru th gums now we have numnums.
Tandoori style is real good. I use 2 garlic cloves crushed tbsp ginger tsp cumin 1/2 tsp cardamon 1/2 red pepper 1 tbsp paprika (or a little saffron, get it at Trader Joe if you live near one) 1/3 cup plain yogurt Marinade the chicken in the juice of a fresh lemon for 1/2 hour (original recipe calls for tenderizer, I skip that) Run the rest through the blender and add it to the chicken. Give it a few hours and cook on a fire.
