    g60gti Nice! Keep us posted on the pizza going forward. I saw a few people on the Reddit Ooni forum talking about Roberta’s dough recipe. I may give that a try.

    Cool collection of VWs! I had a 1994 MKIII Jetta 2.0 that I did a lot of work to. Fun car.

    my wife and I had pizza two nights in a row last week. I’ll post up some pics.

    Went with 345grams for this one. A touch thicker. It came out good. Gonna try a new recipe Monday and will post results.

    edit: My wife sautéed the onions in butter and Marsala wine. I highly recommend actual Marsala wine from the liquor store. It has a much bolder flavor than the grocery store version.

    Looks great Skier76 ! I’m not working OT this weekend so I’m going to try and bake some pies unless someone made plans for me. Thinking I want to do a shrimp and bacon pie. Probably have some people over for the Bills game so I may have to make a few. Will cook in the oven most likely so I can watch game without running in and out.

    My most memorable pizza - April last year in tiny Mexican Hat, Utah. We stayed at this motel where a bunch of balloonists were staying. Nice lady just walked up to us and said "We have leftovers, would you like to make your own pizza?" Uh... Yeah!

    Yes, the pizza oven just sits on a two burner propane cook stove.

    Cousin Brenda! Yep, Fast Eddie's Pizza! As a matter of fact, we had just spent a week in Arizona with my cousins and their husbands the day these pictures (above) were taken. Brenda was on the phone half the time running things all week, and making sure things were right - even from a few thousand miles away. I've never had one, never been there, but hear it's fantastic pizza.

    I like Abby's Pizza - it's an Oregon chain mostly.

    That's the "now famous" Brenda in the middle - she's a go get'er. I took the picture so I'm not in the picture, my wife next to Brenda.

    Sautéed some pancetta, cut up some garden Siracha peppers and some tomato sauce from garden tomatoes. Plus a few other things…

    Looking good. Jalapeños and bacon, can’t beat that! I’ve been so busy with things around the house and kids sports I haven’t baked in forever it seems. Things should be winding down here pretty soon and hopefully I’ll be able to turn out some pies.

    Thanks! I love experimenting with different toppings. It often comes out good. That one posted above was mostly stuff that was stashed in the freezer. Ha!

    I will say, the warmer temps make a slight difference. I noticed the pizzas cook up a bit quicker and the dough is just a bit more moist when it comes out. The crust has a really good crunch with a slightly softer center vs the cold weather bakes. I’m also now making a dough that’s 50% AP flour and 50% 00 flour, so that probably factors in.

    I’ve been roasting the San Marzano tomatoes for the sauce. Makes quite a difference!

    And here’s a new creation; escarole and beans pizza. This was really tasty! Made the escarole and beans using a modified recipe for Pane Cotto.
