Belated welcome Snowy and Ambient - nice to see you both here.

You'd be proud Snowy, side panels are off the stove now, had to trace an electrical issue: stove switched into "Final Cleaning" on it's own a few times over the past week, was a bit concerning (to say the least).. Lots of DVOM testing here.

Traced the problem down to the door switch, on this stove there is a latch gate mechanism, screwed to the side of the stove (acts as a pivot point), that raises the latch gate to engage a magnetic reed contact switch when the door latch is closed, completing the circuit.

Issue was a worn / failed shim at the pivot point, allowing too much movement / play of the latch gate mechanism, preventing reliable switch contact.

Fix was a new washer at the pivot point, with some lithium grease. Seems to be running ok, on day 2 now.

The Ecoteck stove is fully programmable, but is a lot of work to tune and run -
I like your reliable, industrial-grade quality "old school" controller solution(s) much better.
