That looks delicious, I need to whip up a batch of ricotta (not as good as feta, but much easier to make).

When I seen the title I thought you meant stuff like collard, mustard & turnip greens....

Chopped fine slow simmered in a pan with finely chopped red onion,a pinch of fresh cracked pepper,a small amount of crumbled cooked bacon, few drops of Tabasco & a generous splash of apple cider vinegar... then served with crunchy cornbread made from extra coarse cornmeal (polenta is great like this too)...mmmm heaven.:cool:

Was the polenta spinach and carrot a "Trader Joe" product, or home made?

It sounded so good, I looked it up. 200 calories and good for you. It got good reviews. The closest TG is 50 miles, so I have to wait a long time before I stock up. Thanks for mentioning the product.
