Well, we processed and bottled 34 gallons of syrup today. The last 34 gallons left will be processed friday. That will clear out remaining product from this past winter. He runs 1600 taps at his maple bush plus leasing another bush about 10 miles away. It is a very interesting process, and highly technical to make the quality products that he produces. Really enjoyed the day.

    Good morning, everyone.

We get two days to clean up from yesterday's nor'easter, before heavy rains on Saturday.

    Stay safe
    Stay healthy

How does he keep the sap from going bad, when he stores it before processing?

Good morning everyone! Like Mike said, cleanup time. I'd like to get the front lawn mowed, mostly to pick up the pine needles. There is so much more mess yet to happen, it doesn't make sense to go crazy. Time to get rid of the mums, though.
Have to bring in more poplar, too.
We caught a squirrel digging up and carrying off the garlic cloves I planted in a barrel. I didn't think they would be attracted to them. So, the barrel has a kiddie pool covering it now.
Have to start packing, too. TRAwzba.jpg
    Have a good Thursday!

After I lost Judy I did not take naps but anywhere from 1:00 to 5:00 became wake up time but was usually around 4:00 most days. I do seem to be waking a bit later lately but 5:00 to 6:30 seems most mornings.

Good morning. Up before the sun. Loaded the boiler as sleet began to fall. Dropping the truck off for service, then in to the office to deal with issues.

He boils the sap at time of gathering. The syrup is then stored in specially built stainless steel barrels in the cold room (constant 34 degrees) until it is time to bottle. Prior to bottling, it is reheated to 185 degrees F and run thru a 5 part filtering system and then bottled. It all has batch control numbers so that there is a complete time line from tap to bottle. All equipment in the processing section is stainless steel (VERY $$$$$$) Sap is pumped off the tap line (1600 taps, 1 1/2 miles of plastic lines) into 2 stainless steel holding tanks (3000 gallons) until boiled off. Boil off is done using all 36" long maple splits. His maple bush is 40 acres of sugar maples. All of his syrup is certified to grade and color.

Ours retired a few years back. The new one, has replaced everything he did, as they fell out or needed more work. I dont miss him at all, and she is friendly, happy, nice looking, doesn't play music that makes one want to jump off a bridge (she's pushing 50 and listens to metal!).
I've started finding doctors who are my age or younger.
And female if I have a choice.
No more krusty old men....for regular visits anyway.

All the best finding a cap replacer.
