    Venison sausage pie (quiche) Wif made last night. Used venison patty breakfast sausage, onions, mushrooms, egg, cream and two cheeses in a pie crust. Don't know the specifics because she just throws things like this together. I imagine any good quiche recipe would go well with the breakfast sausage. I honestly tried to get a picture before the chow hounds got at the pie but was not fast enough. Not a lot of contrast between the countertop and the pie. I once set a plate of scrambled eggs on the counter and we found them 3 weeks later! deerpie.jpg

    Anyone ever try cougar, or mountain lion, as they are called in some states? It honestly tastes like very tender venison.

    I got a friend in Wyoming that grew up in Louisiana, seems every time we get together he mentions squirrel gravy & cat head biscuits. Apparently the biscuits were the size of a cat’s head

    I might have been extra hungry the time i tried it, i'd been out beating the brush trying to call in a turkey, it was late, and i just came out to the property owner's house , he asked me if i was hungry. And, i took him up on it, boy, was it ever good.

    I have 2 things planned for deer camp this weekend. A 24 hour sous vide venison roast and a Sardinian Stew with squirrel. I'll be bringing up some turkey legs for the stew as backup in case my small game hunt tomorrow doesn't turn out well.

    Years ago when my dad was alive he would walk across the golf course with one of our beagles and go rabbit hunting. Then my mom would make rabbit pot pie.

    Parboil the rabbit in water with baking soda added. Dump that and rinse the rabbit. Put in fresh water and boil till tender. Remove the rabbit an allow to cool. Save the juice. Debone the rabbit. Saute onions and celery in butter. Start adding the juice in with flour to thicken. Once thicken add the rabbit. At this point if your now ready to eat yet, put in a casserole dish and put in oven on low to keep warm and heat rabbit. Serve over baking powder biscuits.

    Just found this thread. Some great looking recipes!

    One of my favorite black bear chili recipes (just made it again a couple days ago). Can eat this stuff every day and never get tired of it.


    Crock Pot Black Bear Chili


    1 to 2 pounds ground bear meat

    1 can black beans (rinsed and drained)

    1 can red kidney beans (rinsed and drained)

    6 cloves fresh garlic, minced

    1 medium onion, diced

    1 can crushed tomatoes

    1 can diced tomatoes

    3 cups beef broth (unsalted)

    1 can diced green chiles

    1/4 cup chili powder

    2 tbsp. dried oregano

    2 tbsp. cumin

    1 ½ tbsp. salt

    1/2 tbsp. black pepper

    Olive oil (as needed)

    Sour cream and shredded cheddar cheese (as optional garnish)


    Spray inside of crock pot with Pam (or substitute)

    Add 2 tbsp. olive oil (or bacon grease) to bottom of crock pot

    Brown bear meat in olive oil and add to crock pot afterwards

    Sauté onions in olive oil until tender, then add garlic and cook until soft - add to crock pot afterwards

    Rinse and drain both cans of beans and add to crock pot

    Add tomatoes, beef broth, green chiles, and all seasonings to crock pot

    Cook on low for seven to eight hours

    Garnish and enjoy!


    This last time I had fresh Roma tomatoes from the garden, so I peeled some and used them in place of the can of crushed tomatoes. I also upped the chili powder by 50% for a little extra kick. Been eating it for breakfast with eggs, lunch, and dinner with some jalapeno cornbread. Doesn’t get much better considering bear season starts in 3 days! In the pic you can see some fresh chopped chives. I don't do that anymore (just didn't like the texture).
