No radish sammiches, or cukes, or tomato. I remember my Mom could make hamburger go a long way. Also we really never had much for snacks around the house so if I wanted something to munch in the evenings it was a handful of raw coconut, or some saltine crackers with p-nut butter or really get creative and melt some cheese on top of the crackers. My Dad always took a lunch meat sandwich and a p-nut butter with raisin sandwich in his bucket. I still to this day love p-nut and raisin sandwiches. I made one when my wife and I first got married and she thought I was crazy until she tasted it, now she loves them.
Rice and beans is a staple in many diets. It is a good one too. If you can have some greens with it, life goes on just fine.
My Dad used to make what he called Slumgullion. His version usually consisted of whatever was from the garden--chard, onions, taters, peppers, kale, kohlrabi, whatever--sauted in the cast iron skillet what some eggs stirred in for protein. Seasoned it with Season-All. If we were lucky, he had some lunch meat ends from the butcher thrown in. It was a typical Saturday night meal, we looked forward to it. I make is sometimes myself.
I'm smiling cause my dad version was red flannel hash.. cast iron pan 2 things that were always in it was beets (the red) and potatoes the rest was stuff in fridge that needed to be used or would go bad.. never same no recipes.. always good... nephews still stop over and ask to make our secret sauce... why it was a secret.. I got boys with no notice a single guy then.. had them for weekend.. think they were 11 and 13 and they could eat... breakfast was easy snacks were easy but healthy dinner mmm.. so we pulled all veggies meats from freezer and fridge and made up huge goulash... they loved it there was no recipe.. my momson home made canned spaghetti sauce add meat veg and spices too taste.. we had a blast in kitchen... they pulled out all spices and we read then and a couple dash of most! it's a secret cause no one knew what was in it except love!
Mom and dad had 9 kids 7 survived til now daycare and foster care (adopted 5).. mom was a RN with degree in nutrition.. mom was organic in 70s before anyone knew what it was... or popular.. less than .5 acre city lot half veg garden .25 her flower beds! when I was 16 I gave mom chit for mothers day.. she loved it... literally 5 Toyota pickups of composted horse manure ... then spent weeks working soils.. With 7 to 12 kids in house eating out was not an option.. you ate your plate.. you knew where most of it came from as it was you with others who picked cleaned and canned it.. I still prefer fresh asparagus peas tomatoes and cucumbers from a garden! but I can't can.. I got 750 canning jars but with that many kids everyone did 1 part ... I don't remember whole process

When my kids were young my wife was in graduate school a couple of nights a week. There were times I would prepare something for dinner they were not familiar with; when asked what it was I would always reply "Good".
