I don't care for celery or green peppers so I leave out .Stuf I always ad that may not b traditional that we really like. Mushrooms ,dry mustard, A1, Siriacha, Thai hot peppers, and fresh garlic . Not a fan of kidneys either so I use great northern beans. GFs son begs to make chili.

I don't have a set recipe; if I have celery in the fridge begging to be used, I'll throw it in. I would also do the same with other things such as mushrooms. Usual ingredients are tomatoes (I hate using canned because they usually add sugar - but will us it if I have to), onions, sweet peppers, maybe a few hot peppers, Some sort of meat (chunk steak, ground beef/pork/sausage, chunk chicken). Beans of any sort are good and usually I use a variety including chickpeas, red, kidney, white northerns. Heck, I've been known to use a bag of 7 bean soup mix.

If I use a package seasoning, it is McCormick's. Or, I throw in cumin, ginger, basil, pepper, maybe garlic, a bit of salt and anything else that sounds good at the moment.
