Double duty on the smoker

    Pic #1 is some pork shoulder. I smoke it, chop into 1" pieces and use it in chili.

    Pic #2 is pre-made corned beef that I turn into pastrami.

    Pic #3 is potato gratin. Slice it thin and in between layers add fried onions and ham and green onions. Also a mix of cheeses (the small bits that end up in the back of the cheese tray). Also pour on a mix of cream with a bit of soy sauce. Bake on convection 325 for half hour or so.
